Cu Lắc started as a series of pop-ups where we explored the boundaries of what a bánh mì could be.
Cu Lắc is a love letter to the bustling streets of Saigon and the constantly evolving food culture that I grew up in. Through the endless search for new flavours and a love of putting a spin on the classics, Cu Lắc introduces a new way to remix the food I love most: bánh mì.

Seeing a demand for our creative bánh mì, we wondered… what’s next? We were quickly outgrowing our space at a shared commercial kitchen, and that’s when an opportunity to open a virtual kitchen appeared. We’re partnering with Kaizen Manga Café, a coworking space in the heart of downtown Montréal, to better serve you our creative bánh mì.
The Future
Cu Lắc isn’t seeking to reinvent the classic bánh mì. We all know that classics don’t need meddling - that’s sacrilegious! By simply sprinkling in some creativity to the bánh mì philosophy, we can expand the possibilities of what a bánh mì can be. Maybe it’s a paneer masala bánh mì with a creamy sauce and pico de gallo. Or a bún bò Huế brisket bánh mì with lime aioli and tempura bits. Cu Lắc knows no borders, just pure delicious food. Are you ready to explore?
