Cu Lắc is a love letter to the bustling streets of Saigon and the constantly evolving food culture that I grew up in. Through the endless search for new flavours and a love of putting a spin on the classics, Cu Lắc introduces a new way to remix the food I love most: bánh mì.


The Anatomy

At its core, bánh mì is a play on contrasting textures and flavours. The bread is crusty yet pillowy, the sauce is silky and lush, and the pickled parts peak through with a punch. Each sandwich is bursting with vegetables and herbs that add freshness to the protein, every element working in tandem to ensure the perfect bite.


The Future

Cu Lắc isn’t seeking to reinvent the classic bánh mì. We all know that classics don’t need meddling - that’s sacrilegious! By simply sprinkling in some creativity to the bánh mì philosophy, we can expand the possibilities of what a bánh mì can be. Maybe it’s a paneer masala bánh mì with a creamy sauce and pico de gallo.
